Google for »itext swf« to get some code samples (in archives of this list, actually). Well, you're only mentioning swf or movies. Maybe you're also interested in embedding flash video streams (I certainly am, too). I think there's no explicit support in iText as of now, but maybe the generic annotation support is already sufficient.
