Is there something I need to do in my code to make that happen? Or is
this something that should be updated in the iText library (I am willing
to submit a patch if I can find the spot where this is supposed to
happen).

The signature field should be visible in the panel. It is visible in the
non-merged version of the document. Also, if I use the PdfCopy (with the
copyAcroForm() method), the signature field will be visible in the panel.

I don't understand your problem. I can see the signature field in the
merged
doc with Reader 8 and 9. I can sign it and see the signature. The
signature
doesn't show in the panel because it's the Reader and the form is not
enabled. All is as expected.
