shipBarCode.setChecksumText(true) and shipBarCode.setGenerateChecksum(true) are not valid for all symbologies. Code128 has an internal checksum that is always present and that is calculated for you. This checksum is invisible and guarantees that that code is read without error. The MOD-10 checksum is particular to the UCC, is part of the text, it's a convention that uses the Code128 symbology. iText doesn't calculate this checksum, it's up to you to provide the complete text, as it's done in EAN13, for example.
