You would probably be better off with an open source renderer. I have used that for image extraction and related analysis. AFAIK, iText is generally for automated pdf creation. If you don't mind me asking, weren't the documents created in such a way that a concise description of the barcode exists ( ie text )? This is a recurring problem as the pdf format allows but authors don't often use some ability to include computer readable information along with pictures.
