I don't know if we understand each other well.

The problem I describe can be caused if you change the graphics state
outside the "watermark page", be it by superimposing the page with
another one, or by superimposing it with other data.

If you're saying the same content stream is added twice, causing the
bold glyphs, then I misunderstood you. If that is the case, can you
confirm that the same "cm a b c d e f /Xf1 Do" is present twice in
the content stream of the page? By the looks of it, this is definitely
not a problem caused by iText, but you may be adding the same stream
twice, for instance by adding the same event twice (page events are
cumulative).
