So I have to manually control the pagination of a table, if I use
absolute positioning.

Of course not!
The table is only split if you use document.add().

Help yourself by reading the documentation.
The method writeSelectedRows doesn't split tables.
That method was written to give you full control,
so you are responsible for doing the math.
