The current content parser doesn't support path operators. Fortunately, iText is an open source project and anyone who is so inclined (hint hint) can extend the relevant classes and submit their changes back to the trunk for everyone's benefit. You'd need to write a new implantation of ContentOperator for each of the new operators, plus supply PdfContentStreamProcessor and GraphicState with the members needed to track the new information.
