You'll need something like this:
BarcodeInter25 barcodeDT = new BarcodeInter25();
CMYKColor barColor = new CMYKColor(...);
CMYKColor textColor = new CMYKColor(...);
iTextSharp.text.Image img1 = barcodeDT.CreateImageWithBarcode(cb, barColor,
