That sounds like you think iText is outdated. That's not true. iText follows the most recent specs. It was a deliberate choice to take 1.4 as the default, as different ISO standards that are still in use (such as ISO-19005 and ISO-15930) are a subset of PDF 1.4. They predate ISO-32000 (based on PDF 1.7).
