Reading this chapter will save both you and me plenty of time.

I have the impression you want to "edit" a PDF, that you want to add 
"fields" and expect the existing content to "reflow". That's not 
possible in PDF unless you use Dynamic XFA, and if you use Dynamic XFA, 
you can fill out the form using iText, but you can't "flatten" it. If 
you don't know what "flattening" is, read page 183 in the free chapter.
