No, there's no "option" to delete a "text layer" (there may not be a text layer, all text may be in the same content stream). Yes, you can parse the content streams and reconstruct the streams so that some specific text is no longer present, but if that's what you want to achieve, you should hire a consultant because it's not trivial.
