Please read section 16.1.4 of the Second Edition of "iText in Action."
It is titled "Replacing a font," and it explains how to replace a 
non-embedded font with an embedded font (which is more common than what 
you want to do). It should be fairly easy to adapt that example so that 
it does the opposite. Use ISO-32000-1 to find out which keys are needed.

Note that what you're trying to do can seriously screw up your document. 
The metrics of the original font can be completely different from the 
metrics of the new font, and that will make your document look very ugly 
(maybe even illegible). The only way to avoid this is to rewrite all the 
content streams in the document from scratch.
