Thank you for your time and help. I made sure the response was flushing
after iTextSharp was done with it to get rid of that HTML. The test server
is running the latest iText, but the live server was running an older one
(and that's where the sample I posted came from) - it's been updated now.
And finally it looks like the Reader Extensions weren't enabled in the
original files, so 186 file open/saves later and that's fixed.
Finally, the "Sample" watermarking was shifting it back to "cannot save".
Now that I've disabled it everything is working.
