The question is confusing because there are two questions in one: [1] you ask for a hyphenation language to be added. => that calls for an extra XML with hyphenation rules for Latin in the itext-hyph-xml.jar => How is Latin hyphenated? For all I know LATINWASWRITTENLIKETHIS until JULIUS.CAESAR.INTRODUCED.THE.DOT.TO.SEPARATE.WORDS. => The Latin used in the middle ages was very different from the Ancient Latin. => What Latin are you talking about? Do you know of any official hyphenation rules for Latin?
