Yes. The fidelity is somewhat lacking these days (style support is spotty), but improvements are in the works. There are quite a few examples of this floating around on the internet. You can search the list archives. You can browse the book examples on iTextpdf.com/book. You can google for code samples. There's an excellent book, iText In Action (2nd Edition). Lots of resources.
