- invisible text as a watermark: use render mode invisible when you add 
the text.
- optional text as a watermark: use OCG with the appropriate setting. 
For instance:
   you can add a watermark that is invisible on the screen, but visible 
when printed.
- something else.

Did you mean:
- you want to be able to copy/paste the text from Adobe Reader
- you want to parse the PDF programmatically and extract that text
- something else.
