Right now I use it to create a PDF and it works great.  There is a lot that
has to be imported but functions fine.

With regards  this question.  I have a standard form that I would like to
make a capturable PDF. By that I mean I get to fill the form out and save
the result as a PDF (a) for storage  (b) for printing.   I am happy to scan
the form and create a jpeg and use this as a background, and then map the
areas as Text or CheckBox etc...   

Why don't you recreate the form in PDF with acrofroms?



 

But my knowledge of programming PDFs is very limited, and this is my first
android project

Buy iText in Action2 it's a good iText manual.
