You are right: this information isn't shown in Adobe Reader's "Document
Description".

But the file also has an XMP stream and this is a snippet of that stream:

You should add this line to your code:
stamper.getWriter().createMetadata();
I'm not sure if this will work in the context of PdfStamper, I've only tried
it in the context of PdfWriter.
Please let us know if it did the trick.
