No, if you flatten the fields, the fields are gone.

You've now heard from two people that setting the read only flag works. 
If you want us to help you, you need to provide a standalone example 
(iText 5 or higher) that reproduces the problem.

Also tell us if this problem persists in the most recent versions of 
Adobe Reader (or if you're using another PDF viewer). Maybe you're using 
a viewer that doesn't respect the read only flag.
