I think you're making the wrong assumptions about PDF.
When you create a PDF all structure is lost (unless you create a "tagged PDF"). A paragraph is no longer a paragraph, but a sequence of glyphs painted on a canvas.
A table is no longer a table, but some lines and some text.

Am I blind and missing something?


Please read ISO-32000-1 and use iText RUPS to look inside the PDF document.

The "Stream" at the bottom is what the content looks like.
It starts with BT (= Begin Text) and it's followed by "/F7 1 Tf".
This means you need to look in the /Resources entry of the
/Page for a font with name /F7. Etcetera, etcetera,...

Or does your library not support a strong reading model?


With iText you have access to the lowest level of the PDF syntax
(as proven by RUPS), but if you make assumptions that there's
something like a "Paragraph" object inside a PDF, please reconsider.
