iText is a library for PDF file creation and manipulation. It doesn't do
file conversion to PDF.
You should have a look at other products, for example:
- Apache POI for data extraction from Excel files (and then iText could be
used to create a PDF file)
- LibreOffice / OpenOffice.org for direct conversion for XLS to PDF
- many other propietary libs offer such a functionnality, and google is your
friend.
Please note that how to use these libraries is totally out of the scope of
this mailing list.
