I'm sorry for misunderstanding,

My task is put a xml document into any PDF file as a data of xfa:data like this

</xfa:data>
</xfa:datasets>
</xdp:xdp>



The meaning is put xfa resources described as XDP packages (in this case the 
xmlDocument) inside the PDF.



iText library can do this?

Er... Since when does OpenOffice create XFA forms?
You told us you were creating a form NOT created by LiveCycle, and that you 
wanted to retrieve XFA. We assumed that you were talking about an XFA form, but 
apparently you weren't. You were talking about AcroForms! And you want to 
create some generic XML containing the fields and values? Surely you don't need 
a book to find out how to create XML if you can retrieve fields and their 
values, do you?
