You will need to use the lowest level object API in iText to add the necessary 
structures to the PDF.

Yes, we are seriously doing separated PDFs in 2012, thanks for the insult. 
Also, as my question implies, I already know about the SeparationInfo. However, 
since I don't have a ton ofexperience with the iText API, the book is no help, 
not to mention the javadocs are different then the book, I'm really looking for 
the best way to add theSeparationInfo and what that should be.

You are seriously doing separated PDFs in 2012?!?!   Get with the rest of the 
world and move to composite!

To answer your question, each page can only consist of 1bit data with a special 
“SeparationInfo” identifier.

Details in ISO 32000-1:2008.

I work for a printing company and in some cases we work with separated PDF 
files. In these cases I need to add an additional "page" or color depending on 
how you want to word it.  I've managed to be able to add the page, but the 
separation info is not added for the page. Does anyone know what the proper way 
to add a new page and have the separation info set properly.  I'm doing the 
same thing with composite PDF files with no issue by simply adding a spot 
color. I've spent most of the afternoon digging for a solution, so any help 
would be appreciated.
