You're building the house starting from the roof.
First learn the basics of Java, by creating your own, stand-alone
applications.
When this works, learn how to make it work from an Oracle database
environment.
In parallel, learn how to integrate a 3rd party lib like iText into your
own applications.

And finally, once you master that, create your own application using a 3rd
party lib like iText and make it work from an Oracle environment.
