You've just made that question irrelevant by clarifying your initial 
question:

In that case, you need to create a Chunk containing the ° character, and 
you need to attach a generic tag event to this Chunk. What is this 
generic tag event? It's a custom implementation of the PdfPageEvent you 
need to write. More specifically: you need to implement the 
onGenericTag() method.
