Your code throws away all the interactivity that may be present in the 
original file.
If you were taking an exam, you wouldn't pass with that code.

If you're always adding the stamp in the same way, then it should be 
possible.
The original content will be in an XObject. The stamp will be in the 
content stream.
If you know which syntax to remove from the content stream, you can 
remove the stamp.
I'm not saying it's trivial, but it's doable.
