but you do know the names of the fields!
The names of the fields are in the keySet of the Map you're creating:

Map<String,AcroFields.Item> map = fields.getFields();

You say you have the book, and I say the solution to your problem is on 
p181-183. Is there a reason why you're ignoring my answer? (If you prefer not 
getting an answer, I can try to remain silent.)
