Looking at your code, I don't see you defining a substitution font anywhere, so yes, you probably have a bug in your code. If you want to know how to fix this, you should read section 8.3.3 of the documentation, entitled "Text field and fonts". There could be different issues at play, you'll have to experiment with the form to find out which of the different strategies explained in "iText in Action - Second Edition" works best in your situation.
