Maybe this is the problem: Open Office creates fields in a strange way. Instead of defining a border of a field on the annotation level; it defines the border as part of the content stream. In this case, hiding the field doesn't matter: it has no effect on what's in the content stream.
If this is the problem you're experiencing, then you should fix your form.
