That's a very strange question.
You have to see PdfStamper as the equivalent of having a paper document
to which you add stamps.
If somebody wants the paper document to have a different page size, you
need scissors or extra paper and tape.
Is that what you mean: do you want to cut away existing content or
enlarge the existing page?
Or do you expect the content of the page to adapt to its new page size?
If the latter, you're using the wrong templates!
