In the strict sense, you're asking something that is impossible: "I have 
signed my pdf correctly. Now I want to change ..."
I stopped reading after the word "change". If you have signed a PDF 
correctly, you can not, should not, may not change anything. Changing a 
document after signing WILL ALWAYS break the signature.

Now that I've read your question a second time, you probably meant to 
ask if you could change the appearance of the signature widget DURING 
the signing process, NOT AFTER. In that case, please read 
http://itextpdf.com/book/digitalsignatures (more specifically the part 
where is explained how to create appearances for signatures).
