I stopped reading after the word "change". If you have signed a PDF correctly, you can not, should not, may not change anything. Changing a document after signing WILL ALWAYS break the signature. Now that I've read your question a second time, you probably meant to ask if you could change the appearance of the signature widget DURING the signing process, NOT AFTER.
