Of course not!

How on earth would iText be able to guess which tag to use for your 
custom metadata?
How on earth would iText be able to guess in which XMP scheme your 
custom metadata fits?

If you want to add custom metadata to the info dictionary (which is by 
the way a bad idea), you'll have to create the XMP stream yourself 
instead of building it using the info dictionary.
