If you manually change <dc:subject><rdf:Bag><rdf:li>This example shows how to add metadata</rdf:li></rdf:Bag></dc:subject> into something else, you'll see that the changes appears in the Keywords section of the Document Properties.

I've always thought this was normal. Isn't it?
Or is iText adding something it shouldn't add?
