If I use iText under AGPL to transform this information into a .pdf does this have any implications for my code?
From the top of my head, I'd say: yes, the moment you create or process PDFs in a SaaS context, the AGPL kicks in, meaning: you have to disclose your code under the same license, that is: the AGPL.
