We have done something similar. We capture the points/strokes of a
signature and create an image out of it. We use the 'official' signature
field of the pdf standard and sign the pdf document. For the visual
representation we use that signature image. No problem doing that using
iText. Have a look at the following example:

In the method 'public void signPdfFirstTime(String src, String dest)'
you can see how to set an image as appearance:
PdfSignatureAppearance appearance = stamper.getSignatureAppearance();
appearance.setImage(Image.getInstance(YourImageAsAByteArray));
The advantage of that is that afterwards your document is digitally signed
and e.g. with adobe reader you are able to verify your signatures and the
integrity of a document. But if you do not need that - then just flatten
the signature fields afterwards and you only have your image inside your
PDF...
