I am VERY VERY happy to be wrong here.  I had a piece of code that wasn't
executing, so it was sending me the wrong file.

This is a great piece of software!  It flattens my LiveCycle documents and
makes them available to iPad/iPod users.

Did you use XFA Worker? http://demo.itextsupport.com/xfademo

Flattening an XFA form isn't supported when using the core iText
library. You need the closed source XFA Worker library on top of iText:
