Hi Nishant , If i am not misunderstood what you want is basic pdf creation/manipulation skill using itext.Then you can follow iText in Action written by bruno.For beginners you can also view sample pdf chapter from Manning Site <http://www.manning.com/lowagie/> .Chapter 3 can help you to create basic pdf creation.Also whole source code for the book is available in manning site with comment.Also you can follow Jakob Jenkov Blog <http://tutorials.jenkov.com/java-itext/index.html> for basic understanding.
Book is also really good if you can afford it you can buy it or grab a copy from library or friend.
