If you want the uncompressed stream, use the YUV device (should be /dev/video32, but check using ivtv-detect). I think there is still a small amount of latency, but have a look at the archives as it's been discussed a few times before. IMHO, it defeats the purpose of having a hardware encorder and you'd be better off with a bttv card.
