In my experience a single 500 works well. 2 500s will take a bit of effort to get working. See the thread "PVT-500, capture ok but no sound..." which lists the patch to set in 0.3.7 to get sound to work.

I have a combined 350 and 500 PAL system with working sound on all tuners.
I am using 0.3.7 with the patch found in http://www.gossamer-threads.com/lists/ivtv/devel/22272
