This is due to the security settings in Mac OSX. Go to System Preferences > 
Security & Privacy. In the General pane of the dialogue, you will find a 
section called “Allow applications downloaded from”. If you set this to 
“Anywhere”, you can start JabRef without problems. Note that this is only 
necessary for the first start of JabRef, so you can restore your earlier 
security settings as soon as JabRef has been running.
