I agree that while there are unicode-based solutions, they are of no use if one
writes for a journal that uses standard LaTeX. (Many journals use the
traditional tex->dvi->ps->pdf, so one cannot even use pdf figures..)

As for your question, Ekstr\om is wrong, as it includes \om, instead of \o;
Ekstr{\o}m, on the other hand, is correct and should work without any extra
packages (as should Ekstr\o{}m, though I generally prefer the former).

The only thing I can think of is checking encoding of your .bib file - I seem to
remember BibTeX having some issues with unicode, so you should be using some
other encoding instead. I would suggest ISO8859_1, to be sure that LaTeX will be
able to interpret all the characters.
You can check the encoding in Jabref in File->Database properties.

Note that if you copy&paste text to Jabref from web etc, it often includes
character like curly quotation marks and em-dashes. In that case, Jabref
complaints on file save and offers to change encoding to accommodate the extra
characters - something you should always decline (and try to find the offending
characters, which Jabref unfortunately does not help with), since you would just
introduce characters that LaTeX would not be able to cope with..


If this does not help, I suggest you create a minimal working (actually, not
working in your case) example and post it here.
