I think you need to spend longer looking at how James works, and email in general.

mail arrives via SMTP
it is processed by the spoolmanager
The spoolmanager contains mailets, a mailet will place local mail into storage
POP3 can be used to retrieve mail from storage

Your logger should go in the local delivery mailet.
