Well what can we do? email is a network protocol, it is pretty nearly totally useless without a network. You know the real answer, use a network, doesn't have to be the net. On the other hand you can set up several users and a few domains (edit /etc/hosts to fake some other hostnames, domains and IP addresses in your unconnected PC) , and several accounts on a single MUA and *simulate* mail traffic.
