Um. You are not doing something right then.
type:
./configure --help
and you will see something like this (note that i'm using a development
version of 1.0.1 so it is slightly different):
--with-apache-src=DIR tells configure where to look for
the Apache source distribution (1.2, 1.3 STATIC
build)
--enable-apache-conf allows automatic configuration of
Apache sources when using a 1.2 or
1.3 source distribution of Apache (STATIC build).

I have not installed Apache JServ with Stronghold, but I have installed PHP
with Stronghild and it was a major major pain in the ass (BECAUSE OF
STRONGHOLD). The reason why is because Stronghold has some bugs in it, so
you need to go to their site and apply the appropriate patches.
Next, you need to just try to get Stronghold to build properly once without
Apache JServ (I suspect that you haven't even gotten this far yet). Once you
have done that, then building Apache JServ is just a matter of following the
directions that comes with the INSTALL file.
If you are still having problems, post a DETAILED log of what you did to
this list.
