The Solaris VM is *very* stable. Solaris VM crashes are very rare,
JIT or no JIT (and for the record, I haven't heard of any Solaris
bugs specific to the JIT. I think the Linux issues were entirely
separate.)
I'd recommend that you try the most recent JServ. There's been a lot
of work on it.
