I'm not sure where you're going wrong...
Attached is a crude example which was posted to the list some while back.  I
hope it helps...

I just tried this and it didn't work....
In my appearance code, I have

     Material theMaterial = new Material();
     theMaterial.setCapability(Material.ALLOW_COMPONENT_READ);
     theMaterial.setCapability(Material.ALLOW_COMPONENT_WRITE);
      :
     A.setMaterial(theMaterial);

and I still get the "no capability to get appearance" exception.

Any other thoughts on how to change a Sphere's color?

By setting the capability bit  ALLOW_COMPONENT_READ/WRITE of your Material
component
it should works.
