If you're referring to face culling, it's set in PolygonAttributes.  You can
have CULL_NONE, CULL_FRONT, and CULL_BACK; CULL_BACK is the default.  If on
average half your polygons are facing away, then specifying CULL_NONE could
approximately half your performance depending upon whether rendering geometry
and texture are your application's bottlenecks.
