Sorry if I miss the point, but... What about z = f(x,y) or (x,y,f(x,y)) ?
where f is a function wich will calculate in Z using x and y values. A classic one: f(x,y) = sin(x) + sin(y) This can be fine to generate simple terrain surfaces. f(a,r) can can also be a polar function, where x,y are angles and radius...
