I have hunted high and low as well.  A very conspicuous omission in
line with Apple's "we know what is right for you".  At least it is
customizable but it takes so much effort to come up with a good color
scheme with all of the options available.  I usually just pick a
slightly off white background color to be less straining and use the
other default colors.
