Two people that immediately come to mind to recommend are Bill Venners
and David Pollak. Both have written books on Scala and both have done
some great presentations on Scala at events that I have organized in
the past. Most recently, they presented along with Michael Galpin at
this JUG meeting of ours:

I'm not sure whether they would be interested or not, but, I think one
or both of them would be a fine addition to your podcast. I believe
they are both making Scala presentations at JavaOne this year.  If you
will also be at JavaOne this year and do not know them personally yet,
I'd be happy to introduce you to them sometime during the conference.
